Turmeric Cookies

The perfect healthy snack for when those sugar cravings hit with the added anti-inflammatory benefit.

Ingredients
  • ½ cup almond meal
  • ½ Tiger Nut Flour
  • ½ cup shredded coconut
  • 1 grated carrot
  • ½ tsp baking powder
  • 2 tsp 79 Tu Blend
  • 2 chia/flaxseed eggs (1 flaxseed egg = 2 tbsp flaxeed to 2 tbsp water)
Instructions
  1. First make your flaxseed eggs to allow them to set
  2. Preheat oven to 180 degrees celsius
  3. Mix dry ingredients together before adding the grated carrot
  4. Mix through 'eggs' and combine mixture well
  5. Line baking tray w baking paper and give a light spray of coconut oil
  6. Scoop balls of the mixture in your hands and shape into desired sized cookie on the tray
  7. Bake in the oven for 15 - 20 minutes (my trick is just to test taste, if they feel hard on outside and a little most on the inside - they are good to go!).
  8. Serving suggestion - top with a spoonful of coconut yoghurt and a sprinkle of lemon zest and turmeric!
